docs: restructure usage guide with clear config/customization split and full callback docs

- Move Instance API and Quick Start to top of document
- Add comprehensive GanttOptions reference table with all 27 options
- Add detailed GanttCallbacks reference covering all 10 callbacks
- Document previously missing options: height, viewportStart, viewportEnd
- Document previously missing callbacks for onMove, onResize, onAdd,
  onTaskDoubleClick, onTaskEditIntent
- Fix setScale -> setOptions API reference
- Organize into Part 1 (Core Configuration & Usage) and Part 2 (Customization)
- Group Theme with framing/typography/density tokens; Selection model with
  visual style
