readme: drop genisoimage from recommended ISO writers

Recommend xorriso or cdrtools for the `hello.iso` target. Note that
`genisoimage` is still detected by CMake but cannot produce a
UEFI-bootable ISO because it lacks `-eltorito-platform efi`, so the
build will fail if it is the only writer present rather than
silently skip the target.
