refactor: define v3 segment interface and migrate segments

- Create segments_v3.go with segmentV3 interface using Node/NodeList
- Implement all segment types: wildcard, name, index, slice, multiIndex,
  multiName, recursive, filter, function segments
- wrapSegments() converts old segments to v3 for backward compatibility
- Query() now uses v3 pipeline internally while keeping same public API
- All existing tests continue to pass (249/703 RFC9535)
