* fix(knot): handle inlined bb_mdns_peer_t string fields; bump breadboard to v0.21.0

bb_mdns_peer_t string members are now inlined char arrays (breadboard
v0.20.1+), not pointers. on_peer_discovered must check for empty string
instead of NULL and copy from the inline buffers directly. Without this
TM fails to compile against breadboard v0.21.0.

Pin bumped from v0.20.0 → v0.21.0 (picks up rotation API, set_default_font,
Spleen font family, ssd1306/ili9341/st77xx backends, bb_manifest brace fix,
bb_mdns inline scalars, bb_http recursive JSON streaming).

* fix(cmake): exclude bb_display backends to unblock version solving

breadboard v0.21.0 ships per-panel backends as separate components. Their
idf_component.yml manifests pull in vendor LCD packages; bb_display_ek79007
in particular requires esp_lcd_ek79007, which is esp32p4-only and breaks
ESP-IDF Component Manager version solving on every TM target (bitaxe-403/
601/650, tdongle-s3).

TM doesn't use bb_display yet — components/display/ is local. Excluding
bb_display alongside its backends keeps the deps out of resolution until
the cutover lands.
