workflows/cmake: bundle Qt plugins into the AppImage

Bare linuxdeploy only follows linker dependencies and misses Qt's
runtime-loaded plugin tree, so the produced AppImage shipped without
any platform plugin and refused to start with "Could not find the Qt
platform plugin xcb/wayland". Add linuxdeploy-plugin-qt and point
QMAKE at qmake6 (added to PATH by jurplel/install-qt-action) so the
plugin discovers the active Qt installation and bundles platforms,
imageformats, multimedia backends, and theme integration.
