fix(organization): coerce empty-string coordinates to null before DB update

Empty latitude/longitude strings from the frontend caused a PostgreSQL
22P02 error (invalid input syntax for type numeric) on PUT
/api/v1/organizations/:id.

Add coerceToNumeric utility (mirrors coerceToInt) that converts empty
and whitespace-only strings to null. Apply it in
GrottoService.getConvertedDataFromClientRequest, GrottoService.createGrotto,
CaveService.getConvertedDataFromClient, and the cave update controller.

Remove the ad-hoc delete-on-empty-string hack from createGrotto.
