docs: add conceptual documentation for NodeClaims

Adds structured API field documentation to the NodeClaims concepts page,
similar to the existing NodePools documentation. This includes:

- Key facts about NodeClaims (immutable, cluster-scoped, one-to-one mapping)
- Annotated YAML example of a full NodeClaim resource
- Field-by-field documentation for all spec and status fields
- Status conditions table covering all lifecycle conditions
