chore: integrate Sentry for error tracking (#1177)

Replace `react-error-boundary` with `@sentry/react` to enable automatic
error reporting and monitoring.

- Initialize **Sentry** using environment variables for the DSN,
  release hash, and environment.
- Swap the root `ErrorBoundary` to use the Sentry-specific component
  while retaining the existing `ErrorFallback` UI.
