🍕 Cut 6.0.0 release candidate and remove docs deploy job

- Bump package version to 6.0.0-rc.0 (package.json + lockfile) so the
  next tagged release candidate publishes cleanly under prerelease flow.
- Remove the deploy-docs job from CI to stop GitHub docs publishing on
  master/stg and keep this workflow focused on test + npm publish.

Lint and test suite remain green after the changes.
