* docs: replace gateway companion model with connector model

Update the gateway requirements, design, validation, and connector API docs to replace the typed companion gRPC model with a cloud-agnostic framed connector model.

The new spec makes the gateway the desired-vs-actual reconciler, defines complete per-entity desired-state messages, moves status/app-data upstream through the connector path, and treats the remote control-plane transport as an implementation detail.
