fix(deps): update test deps and remove DI package

This commit updates test dependencies and removes unnecessary
package references from project files.

- Remove Microsoft.Extensions.DependencyInjection from Benchmarks and TestApp projects
- Update Mecha.xUnit to 3.3.17 in ObjectCartographer.Tests.csproj
