perf: ship a Profile-Guided Optimization profile

Adds a default.pgo at caddy/mercure (auto-consumed by `go build` for the
released Caddy-embedded binary) and a copy at the module root so that
downstream xcaddy and Go-library consumers can reference it via -pgo=...

generate-pgo-profile.sh drives the Gatling load test against a freshly
built hub (local:// transport, anonymous + subscriptions enabled, JWT
with publish/subscribe selectors set to ["*"]) and captures a 60s pprof
CPU profile from the Caddy admin endpoint. release.sh now invokes it on
every release.

docs/hub/go-library.md covers the xcaddy and `go build` flags needed by
users who build from source and want to keep the PGO speedup, plus how
to refresh the profile.

*.pgo is marked binary in .gitattributes so diffs and merges treat the
profile correctly.
