Allow Enum values as attribute defaults (#1302)

Enum instances are immutable by design but were rejected by the
immutability check introduced in PynamoDB 6.0. Adding Enum to
_IMMUTABLE_TYPES allows using e.g. `default=MyEnum.VALUE` directly
without having to wrap it in a lambda.

Closes #1301
