chore!: bump Python support to 3.12–3.14

BREAKING CHANGE: Python 3.10 and 3.11 are no longer supported.

- Update requires-python from >=3.10,<3.13 to >=3.12,<3.15
- Update CI matrix to test Python 3.12, 3.13, 3.14
- Use Python 3.11+ datetime.UTC alias instead of timezone.utc
- Drop upper bound on invenio-cache and fix dependency syntax (remove parentheses)
