Upgrade default go builder image to golang:1.26-alpine (#4955)

Bump the default go transport builder image from golang:1.25-alpine to
golang:1.26-alpine so new go-scheme workloads build with the current
stable toolchain. Users can still pin an older release via
--runtime-image when a project needs it.

Also correct two pre-existing doc references that claimed the Go runtime
stage uses alpine:3.22 -- go.tmpl already pins alpine:3.23, so the docs
were drifted.
