Use picture element to serve dark/light logo variant per theme

Replaces the plain img tag with a picture element so GitHub serves
websocket-ts-logo-dark.svg in dark mode and the default SVG in light mode,
eliminating the background colour mismatch introduced by browser SVG
rendering in dark mode.
