feat: tighten config validation, fix edge serialization, standardize tags

Config validation:
- Add dive,oneof validation to extract fields (kafka, github, grafana, notion)
- Add url validation to host/base_url fields (grafana, redash, confluence,
  metabase, superset, tableau, compass sink)
- Add port range validation to cassandra (gte=1,lte=65535)
- Add file existence validation to dbt manifest/catalog paths
- Add conditional required for kafka TLS/SASL auth fields
- Add default tag for notion base_url
- Fix grafana sample config to use full URL

Edge serialization:
- Kafka sink: switch from proto Entity-only to RecordToJSON, edges are
  now included in messages instead of being silently dropped
- HTTP sink: switch from EntityToJSON to RecordToJSON so edges are
  included in the HTTP payload

Tag standardization:
- Standardize all sink and processor tags to platform/domain taxonomy
  matching the extractor convention (e.g. oss/catalog, gcp/storage)
