fix: upgrade release job to use gradle/actions/setup-gradle@v6.0.1 (#683)

The release job was using the deprecated gradle/gradle-build-action@v3.5.0
whose Post Setup Gradle cleanup init script tries to read the write-only
property 'removeUnusedEntriesOlderThan' from Gradle's cache configuration.
This property became write-only in Gradle 9.x, causing the build to fail.

Upgrade to gradle/actions/setup-gradle@v6.0.1 (the same version already
used by the build_linux job) to fix the compatibility issue.
