fix(http_server): raise max_uri_handlers to 32 to prevent slot overflow (#105)

At max_uri_handlers=20, the full handler set (10 route handlers + 1 preflight wildcard)
exactly fills available slots. Any additional registration fails silently, causing requests
to fall through to the /* OPTIONS wildcard handler, which rejects GETs with 405.

Discovered during N8-T bringup; applies to all boards using the http_server component.
