fix: remove deprecated kotlinOptions DSL, incompatible with Gradle 9

The kotlinOptions DSL was deprecated in favour of compilerOptions.
Gradle 9 promotes this deprecation to an error, breaking the build.
The jvmToolchain block above already sets the JVM target, making
this block redundant.
