ci: honour MENDER_IMAGE_TAG in GUI e2e compose fallback

The GUI image fallback in docker-compose.e2e-tests.yml was hardcoded to
:main, ignoring the MENDER_IMAGE_TAG variable. When enterprise
acceptance jobs set MENDER_IMAGE_TAG to a release-derived tag (e.g.
v4.1), the GUI image still pulled :main while all other services used
the release tag.

Use ${MENDER_IMAGE_TAG:-main} in the fallback to stay consistent.
