fix: spec/test alignment and security doc correction (#744, #746, #748) (#754)

* fix(sonde-bundle): tighten T-SB-0607 and T-SB-0608 test assertions

Align pin validation test assertions with spec expected formats
(issue #748, finding F-043 D13_ASSERTION_MISMATCH):

- T-SB-0607: assert full spec string \\GPIO pin number out of range
  (0-21)\\, node name prefix, and actual values instead of loose
  \\out of range\\ substring match.
- T-SB-0608: add positive \\YAML parse error:\\ prefix check to
  verify the error is a deserialization failure, not a validation
  error with a node-name prefix.

* fix(docs): correct replay protection claim in security.md

The \\one-time-use nature of the encrypted payload\\ claim was
inaccurate: the gateway accepts duplicate PEER_REQUEST with the
same node_id/PSK and re-sends PEER_ACK (engine.rs:497-507).
Reword to accurately describe what is and is not protected.
