fix: pin undici to <8 for jsdom compatibility

jsdom@29.0.2 requires undici ^7.24.5 but the pnpm override
'>=6.23.0' allowed undici 8.x to resolve, breaking
'undici/lib/handler/wrap-handler.js' imports in jsdom.

Cap the override to '<8' to force undici 7.x resolution.
