fix: resolve all release blockers for beta build

- Add //go:build gui to internal/guiapp/app.go and undo.go — both import
  Wails and call functions only defined under the gui tag; without the tag
  the package failed to compile, breaking all unit tests and make dev
- Fix goreleaser overrides block: split single darwin entry into amd64 +
  arm64 entries (GoReleaser v2 requires both goos and goarch)
- Replace deprecated archives/nfpms builds: key with ids: in all three
  archive entries and the nfpm block
- Fix broken LDFLAGS for standalone gui build: module path is
  audiobook-organizer-gui not jeeftor/audiobook-organizer; drop the -X
  flags that were silently no-ops
- Remove brews block: incompatible with homebrew_casks schema; homebrew
  formula support can be restored properly in a follow-up
- Add CHANGELOG.md covering all commits since v0.11.0

goreleaser check and go test ./... (727 tests) now pass cleanly.
