engine: remove overbroad coverage exclusions from RPM-to-Pyxis mapping and generateBundleHash

Extract convertToRPMs function from writeRPMManifest to make RPM mapping
logic independently testable. Use regexp.MustCompile instead of
regexp.Compile since the patterns are constants.

Add unit tests for:
- generateBundleHash: deterministic hashing, Dockerfile skipping, empty bundle
- convertToRPMs: full field mapping, missing source RPM, non-matching PGP,
  empty package list, complex source RPM names
