project: use github_project_name for badges and add want_appimage

GitHub-specific badge URLs (shields.io, Coveralls, ReadTheDocs,
Stargazers) used project_name which is the PyPI name; when the repo
name differs the badges broke. Switch templates and postprocess to
github_project_name.

Extract the duplicated AppImage platform check into a want_appimage
Jsonnet setting and use it in workflows, templating, and postprocess
cleanup.
