project: switch to async niquests and add Python 3.10/3.11 support

Replace requests with niquests throughout. All client methods and
generators are now async. YouTubeClient takes an AsyncSession; session
creation is handled by the new build_youtube_session() helper. CLI
commands wrap async calls with anyio.run, so the user experience is
unchanged.

Drop requests-mock test dependency; mock download_page directly instead.
Add tests for download_page and build_youtube_session to restore 100%
coverage. Mark all async tests with @pytest.mark.anyio.
