Select gatekeeper flavor via ARCHON_GATEKEEPER_FLAVOR

Simpler UX: set ARCHON_GATEKEEPER_FLAVOR=rust in .env (or export it) to
switch implementations. docker-compose.yml composes the filename from
the flavor via include:

  include:
    - docker-compose.gatekeeper-${ARCHON_GATEKEEPER_FLAVOR:-ts}.yml

Drops the previous ARCHON_GATEKEEPER_COMPOSE_FILE indirection so users
only need to type the short flavor name (ts or rust) instead of the full
compose filename. start-node-ci normalizes ts|typescript to `ts` and
accepts the flavor from either its positional arg or a pre-set
ARCHON_GATEKEEPER_FLAVOR.

Document the new entry in sample.env and update flavor-file header
comments.
