fix: prevent nil PublicKey panic for ed25519 accounts

Add Curve field to Account so check() can branch on the wallet's curve.
For ed25519 (Solana) accounts paired with EVM/bitcoin networks, set the
address to N/A instead of calling secp256k1.PublicKey methods on a nil
pointer. The Curve is set during init() and backfilled from the parent
wallet on first check() for existing rows.
