docs: update documentation to match current codebase

- Refactor README.md with expanded features, API groups section, and
  supported versions (8.2, 9.0 stable; 9.1 preview; K8s 1.33)
- Fix TLS config syntax in user-guide and best-practices to use
  access.enableTLS/certIssuer instead of incorrect access.tls.* fields
- Add missing Cluster and Failover CRDs to API index reference table
- Fix ValkeyModule example to use path field only (no name field)
- Fix NodePort example to use ports field instead of nodePortSequence
- Add missing ValkeyStatus fields (matchLabels, lastShardCount, lastVersion)
- Remove references to non-existent example directories (advanced/, rds/)
- Add cert-manager prerequisite to user guide
- Standardize naming to 'Valkey Operator' across all docs
- Update version comments in all example YAML files
- Remove K8s 1.31 from compatibility matrix for Valkey 8.2, 9.0, 9.1
