Standardize workload CRD healthy phase on Ready (#4689)

All workload CRDs now use `Ready` as the healthy phase value instead of
a mix of `Running` and `Ready`. MCPServer, EmbeddingServer, and
MCPRegistry previously used `Running` while MCPRemoteProxy,
VirtualMCPServer, and MCPGroup used `Ready`. This inconsistency forced
consumers to handle two different string values for the same semantic
meaning.

The API is v1alpha1 so this carries no stability guarantee. Changing
these values post-stabilization would be a breaking change, making this
the right time to standardize.
