Redact secrets in Config Debug output (#2186)

* Redact secrets in Config Debug output

Replace derived Debug on Config with a manual impl that redacts
auth_client_secret, database_url, postmark_token, and session_secrets.
This prevents accidental secret disclosure if the struct is ever
debug-formatted in logs or error messages.

Follows the existing pattern used by Crypter's manual Debug impl.
