Comprehensive doxygen documentation overhaul

- Update doxygen.cfg: version 1.2.0, expanded PROJECT_BRIEF with all
  supported displays, enable JAVADOC_AUTOBRIEF, set EXAMPLE_PATH and
  IMAGE_PATH, modern color scheme (teal/blue hue)
- Create 3 new .dox guide pages:
  - getting_started.dox: installation, first program, drawing basics
  - display_selection.dox: complete display/platform compatibility tables
  - api_overview.dox: architecture diagram, layer descriptions, color handling
- Rewrite src/README.md (doxygen mainpage): clearer intro, quick links to
  guide pages, complete display table with all 17 variants, updated platform
  table with Pico and libgpiod, copyright year to 2025
- Improve canvas.h: add @brief, @return, @see to all drawing functions,
  better NanoCanvasOps class documentation with @tparam
- Improve lcdgfx.h: add file-level @brief with usage example and @see links
- Fix 40+ code generator doc templates:
  - Fix invertMode docs that incorrectly said 'normal mode' (sh1106/sh1107/ssd1306)
  - Add @see cross-references between related functions
  - Add @return to getter functions
  - Fix 'dispay' typo in setRgbMode docs
  - Improve setRotation docs with dash-style rotation values
  - Improve displayOn/displayOff with sleep mode note
- Regenerate all display headers with improved documentation
