fix(ui): replace NewRGBColor with named ANSI colors for terminal compatibility

tcell.NewRGBColor requires true color support (COLORTERM=truecolor).
When not supported, tcell falls back to white, making graph bars,
grid lines, and borders render as white instead of cyan/red.

Use tcell.ColorAqua and tcell.ColorRed (ANSI 256-color palette) which
work correctly across Terminal.app, Warp, and Linux terminals.
