Add NAT end-to-end test and fix helper data race

Two-network integration test: client on network 2 downloads from both
an HTTP server on network 1 (through NAT) and from GitHub (through
NAT → slirp → internet). Fix data race in helper iteration by
snapshotting the helpers slice under lock before iterating.
