docs: post-AEAD migration audit — fix stale HMAC references (#637)

Audit report: docs/audits/aead-migration-maintenance-audit.md (16 findings).

Immediate remediations applied:
- R-01: Update copilot-instructions.md: \HmacProvider\ → \AeadProvider\,
  wire format description → AES-256-GCM + 16B tag
- R-02: Update bootstrap/maintain/evolve workflow prompts: HMAC-SHA256 →
  AES-256-GCM, \HmacProvider\ → \AeadProvider\, sonde-pair crypto list
- R-03: Update PR review workflow: HMAC-SHA256 → AES-256-GCM
- R-04: Remove unused \hkdf\ dependency from sonde-gateway
- R-05: Fix node-validation.md traceability table — replace deleted test
  names (\	_e2e_002_hmac_round_trip\, \	est_invalid_hmac_discarded\,
  \peer_ack_tampered_hmac\) with actual AEAD test function names
- R-06: Fix stale doc comment in E2E test t_e2e_061 (ECDH → AEAD)
