fix: make NFT skip pagination test deterministic

The test asserted that the first item from the full list would not appear
in the skipped results. This is flaky because NFTs created in the same
second share identical created_at timestamps, making sort order
non-deterministic between queries. Changed to verify the skipped result
set is a proper subset of the full result set instead.
