refactor: replace SetSourceFS/Add with AddFS, clean up writer API

Remove Writer.srcFS field and SetSourceFS method which could point to
the wrong filesystem when multiple AddFS calls are made. Replace the
exported Add WalkDirFunc with AddFS which captures the source fs.FS
in a closure, ensuring each inode references the correct filesystem.
