Refactor themeStore module and update documentation (#2740)

This PR refactors the themeStore module and the theme naming convention to be more idiomatic for the Operating System default theme option. The following changes have been made:

- Rename the `vb-theme-root` theme class to `vb-theme-auto` to be more idiomatic of its purpose.
- Types have been consolidated and `themeStore` relies more on inferred types instead of defining explicit interfaces.
- Documentation has been updated to better explain options in a standardized way as well as other improvements.
- Core Vite demo has been tested to ensure `themeStore` is working as expected.

This PR is meant to address #2729
