Ensure API responses contain proper JSON structure (#249)

- Fix API response for the /mp API endpoint to return a JSON  structure instead of escaped string
- Fix response keys to ensure "result" key and "message" are used consistently for both single and multi-event responses
- Add Enum to restrict allowed "result" values in API response
- Update documentation with current API responses
- Add missing 207 API response in API annotations
- Update tests to also check response body
- Simplify set-up of expected responses in controller unit tests
- Add input and response examples in API annotations
