ci(rust): exclude workflow integration tests from llvm-cov

cargo llvm-cov without --bin runs all tests including tests/workflow.rs,
which requires the ttrpg-dev-engine subprocess — not present in the rust
lint/coverage job. The workflow tests now have their own dedicated
integration job; scope coverage to the binary's inline unit tests only.
