chore: switch release workflow to RubyGems trusted publishing (#6)

Replace API key + gem push with rubygems/release-gem@v1 (OIDC).
- No stored secrets required — eliminates the MFA/WebAuthn push failure
- Adds id-token: write permission for the OIDC token exchange
- Adds environment: release (gate the publish job behind a named env)
- Removes GEM_HOST_API_KEY dependency entirely

Pending trusted publisher must be registered once at:
https://rubygems.org/profile/oidc/pending_trusted_publishers
