docs: comprehensive documentation improvements and fixes

- Add missing extractors (csv, elastic, bigtable, bigquery) to feature matrix
- Write enrich processor and Kafka sink READMEs (were empty)
- Document MaxCompute support in tableau and optimus extractors
- Fix broken date-kafka example recipe referencing non-existent extractor
