fix(couchdb): switch from bitnami/couchdb to official couchdb image

The bitnami/couchdb:3 image has been removed from Docker Hub. Switch to
the official couchdb:3 image and update the config mount path from
/opt/bitnami/couchdb/etc/local.d to /opt/couchdb/etc/local.d.
