fix: Symlink Docker path on CI runner for coverage report generation (#1001)

The .cov files contain Docker container paths (/var/www/html/...) but
phpcov needs to read actual source files to build the Clover report.
Create a symlink from the Docker path to the CI workspace so phpcov
can resolve the source files.
