* docs: update deployment SOP with hardware testing findings

- Move pairing tool download into step 1 alongside firmware artifacts
- Add NSIS installer filename pattern (\Sonde Pairing Tool_X.X.X_x64-setup.exe\)
- Add channel mismatch warning: pairing tool defaults to channel 1,
  does not auto-detect gateway channel (issue #518)
- Add step 5: smoke test checklist (modem status, scan, empty node/program lists)
- Add serial monitor close tip to step 3 (prevents port-busy errors)
- Include \RUST_LOG=sonde_gateway=info\ in step 4 and step 10 gateway commands
- Rename \my-node-001\ to \sensor-01\ to match real hardware testing
- Add five troubleshooting entries: Windows BLE pairing, espflash port busy,
  WARN-only logging, NODE_ACK indication, channel mismatch
- Renumber steps 5-11 to 6-12 to accommodate new smoke test step
- Update cross-references (step numbers in flag table, troubleshooting)

- Update step 7 warning: gateway passes RF channel via
  \PHONE_REGISTERED\ (not manual-only as previously stated)
- Real risk is changing channel after pairing, not during
- Add \Start-Process\ example for Windows NSIS installer (spaces in path)
- Update Phase 2 step 3 to note channel is pre-filled from gateway
- Update troubleshooting entry for channel mismatch
