chore(lib): use optional peer deps for plugin packages

Move prismjs, mermaid, katex, clipboard, and emoji-toolkit from optionalDependencies to peerDependencies with peerDependenciesMeta optional: true, so they are not installed by default when adding ngx-markdown (see #621).

Document optional peers in README and add CHANGELOG entry for consumers that relied on transitive optional installs.
