feat(ci): Coveralls integration + Homebrew/Scoop publish tests (REQ-GO-068, REQ-REL-004)

- Add Coveralls coverage upload step to CI workflow
- Add coverage badge to README
- Add TestCoverallsIntegration validating CI coverage pipeline
- Add TestHomebrewScoop validating release publishing config

Both v1.0.0 blockers now resolved.
