fix(serializer): escape plain strings with [[ prefix in JSONExt serializer

Strings that happen to start with [[ (e.g. "[[DT]]1000") were incorrectly
deserialized as special types (Date, BigInt, etc). Add [[ES]] escape prefix
for plain strings starting with [[ to prevent false positives.

Closes #1340
