docs: clarify IsAKSTaintKey asymmetry and silent sanitization behavior

- IsAKSTaintKey: document why it doesn't check legacy label keys (RP's
  taint validator has no legacy taint key equivalents)
- configureTaints: document that silent stripping is by design (matches
  label sanitization pattern), with CRD CEL as the user-facing feedback
